No-Bake Chocolate Chewies

It's a hot, hot summer and we should probably be making ice cream and popsicles instead. But we are diehard chocoholics and old habits are hard to resist! ;)

Meet our latest homemade craze...aptly christened Chocolate Chewies by the kiddo, these chewy and yummy creations take only 45 minutes from prep to consumable cookie and use no flour.

Our slightly adapted version:
  • 4oz (1 stick) butter - cut into 3-4 pieces
  • 1/2 cup milk
  • 3/4 cup sugar (I've gone as low as 1/2 cup but the one time that I used a very dark Lindt chocolate bar, a cup of sugar was a better bet)
  • 1 cup semisweet chocolate chips
  • 1 tsp vanilla (I usually add a dash more because I'm silly that way lol)
  • 3 cups quick-cook oatmeal 
I sometimes like to increase the chocolate a little and decrease the oatmeal but the above has been the best combination of ingredients so far.
Steps:
  • Line a cookie sheet with parchment or wax paper
  • Place the first three ingredients in a small saucepan and bring to boil, stirring frequently
  • While mixture is heating up, combine the chocolate chips, oatmeal and vanilla in a mixing bowl
  • Once the mixture on the stove hits a rolling boil, set your timer for a minute for it to boil fully
  • Pour hot liquid mixture into chocolate-oatmeal bowl
  • Stir quickly and well to mix
  • Drop by tablespoonfuls onto parchment paper
  • Freeze for 30 minutes or let it set in the fridge for about 1.5 hours
The original recipe states that you will get 30 two-inch cookies but we've only managed about 15 or 16 at the most. Umm, we like our cookies bigger I guess. The whole process, including clean up, takes about 45 minutes if you use the freezer instead of the fridge. Easy enough for kiddo to do on his own!

Enjoy! :) Psst...they don't last very long in our home but you should be able to store them in the fridge or freezer for at least a week, me thinks. Don't quote me on this one though.
